Season’s at Highland Lake Inn was doing the fresh-and-local-ingredients thing long before it was cool; “eating clean” has been their raison d’être for decades. Since they no longer have to prove themselves in this area, they’re free to play, dubbing their new signature beef patty the Dirty Burger. It’s “dirty” as in soulful — as satisfying as the blues. The decadent dish is a mix of Angus beef tenderloin, chuck, and Applewood smoked bacon, topped with house-smoked goat cheese, roasted tomato, slow-cooked onion jam, and baby arugula, all housed in a brioche bun. “It’s a culinary masterpiece that revels in the idea of ‘naughty but nice,'” explains food-and-beverage manager Peter Fassbender.
