Hendersonville’s Gateaux Cakes & Pastries is offering three baking classes on Saturdays in February. Lindsay Cromartie, owner, describes her bakery as “European influenced with a lot of Southern flair.” On February 2, 10am-2pm, she’ll teach how to make macarons. Ten participants (working in pairs) will learn a brief history of the signature French cookie, including demonstrations and troubleshooting techniques; get a recipe to keep and enjoy a light lunch; then begin baking, turning out 12-18 macarons to take home. On February 9, 10am-4pm, Cromartie welcomes 10 more guests (again working in pairs) for The Cookie Class, where she’ll demonstrate how to prepare dough for icebox, scooped, piped, and iced sugar cookies. After eating a light lunch, participants will roll, bake, slice, and ice their confections. The last class is Intro to Cake Assembly & Basic Finishes, happening February 23 from 10am-1pm or 2pm-5pm. The class has a maximum of 5 guests; they’ll learn to level, fill, crumb coat, and finish cakes in a professional manner. Each participant will take home an 8” cake. Students should bring their own cake turntable; all other supplies are provided. Class prices vary.
